Busy eating

First, I’m going to start out by saying: I love food... like, more than anything in the world.

But sometimes it’s difficult to not only eat right, but also enough during a typical busy day. Some people do not have time to even grab something small, and some even forget due to a hectic Monday morning. As I fall into this category on the occasion, I make it an everyday goal to have at least one healthy meal that’ll make me feel good about what I had at the end of the day.

This year I no longer have a meal plan, giving me a lot more room to make something I actually want to eat rather than something I’m sad I have to eat again (a.k.a., all freshman year). Being able to add more nutrition to my daily meals and feel good about what I am eating influences so many aspects of my life; I am more energetic, happier on a daily basis and feel better both mentally and physically.

With that, I have come to the realization of just how easy it is to change eating habits. There are so many different things you can make with the same ingredients. This way, it doesn’t feel like you’re eating the same thing all the time, and it’s still yummy and beneficial. Here are a few of my go-to’s that are so easy to make any way you want:

• A CLASSIC: Avocado toast/rice cake! I usually add everything bagel seasoning, siracha and bell peppers.

• English muffin w/ peanut butter and a side of fruit.

• Chickpea pasta (with any sauce) and some kind of veggies (I like broccoli).

• Yogurt with granola and any fruit (I like apples, strawberries and raspberries. I also like it with a bit of cinnamon and melted peanut or almond butter).

• Bagel with cream cheese, avocado or peanut butter w/ cinnamon (I usually have two different toppings on each side of my bagel).

These are just a few of my absolute favorites. They are super quick and easy as you venture through a busy school day. Learning to eat well isn’t always easy, but it can be fun and even surprising!
